Guinness Cupcake Recipe

St. Patty’s was a blast this year, and thanks to Pinterest there were plenty of new crafts and recipes to try out. The leprechauns were out in full force this year… they turned some of our cheerio’s into marshmallows (making them into ‘lucky charms’), they turned our milk green, ate all of the broccoli that was in the leprechaun trap  and they even went pee (green food coloring) in the kids bathroom and didn’t flush!

Well, the adults got to have a little fun with the festivities too and we tried out a recipe we found on Pinterest for Guinness cupcakes with Bailey’s cream cheese frosting!

The recipe is definitely worth trying out – it did not disappoint.

2 C unbleached all purpose flour
1/2 C Dutch processed cocoa powder
1/4 tsp salt
1 1/2 tsp baking soda
1 C granulated sugar
1/2 C light or dark brown sugar
4 oz./1/2 C unsalted softened butter
2 tsp vanilla extract
2 egg
1/2 C sour cream
1 12 fl. oz. bottle/1 1/2 C Guinness or stout beer

Preheat the oven to 350 degrees and butter or line with paper cups 2 12 count muffin tins.

In a large bowl briefly whisk together the flour, cocoa powder, baking soda, and salt.

In the bowl of a stand mixer with a paddle attachment or with a hand mixer, beat the butter, granulated sugar, and brown sugar until light and fluffy.

Add one egg and beat until evenly mixed and fluffy, make sure to scrape down the mixer bowl once in a while. Add the second egg and vanilla extract and beat again until light and fluffy.

Add the sour cream and beat in, then with the mixer running, slowly pour in the Guinness.

Sift the dry ingredients into the batter and slowly stir the batter until it is evenly mixed and there are no streaks of flour. Make sure to stop the mixer frequently to scrape down the sides and make sure to mix up any flour pockets hidden on the bottom of the bowl.

Divide 1/4 C of batter into each muffin cup, you’ll get about 20 – 24 cupcakes.

Bake at 350 degrees F on the middle rack for 20 – 25 minutes. A toothpick inserted into the center of a cupcake in the middle of the pan should come out clean. Make sure to rotate the pans halfway through baking. Set on a rack to cool to room temperature before frosting.

For layer cakes: baking 25 – 30 minutes, rotate the pans around halfway, a toothpick inserted in the center of the cakes should come out clean.

Bailey’s Cream Cheese Frosting
1 8oz. bar of cream cheese, softened
1 4oz. stick of unsalted butter, softened
2 C confectioner’s sugar
4 – 6 Tablespoons of Bailey’s Irish Cream

In the bowl of a stand mixer with a paddle attachment or with a hand mixer, add the cream cheese, butter, and confectioner’s sugar and beat until light and fluffy. Slowly drizzle in the Bailey’s, more or less depending on how boozey you want the frosting, and beat until completely incorporated into the frosting.

 

Watch Where You Demo

We always take caution and inspect our project areas before we begin to disturb anything. We often find birds nests in shrubs or trees that we will be removing and we relocate them to another bush / tree that is not being removed. We are always conscience about the impact our construction process will have on any wildlife in the area and take all steps necessary to minimize any disturbance.

We have unearthed some pretty interesting things during the demolition phase of some of our pave stone projects – mostly toys, clothes, shallow electrical and water-main lines, snakes, etc… but on Thursday we discovered the cutest of them all. During the removal of a severely rotted wood deck we discovered a burrow with 2 infant rabbits. They were each about the size of a pear and appeared to be unaware of our presence or that their home was being removed.

Feeling pretty bad about disturbing the home they had made, we set them up with a makeshift shelter while we researched the best avenue for the bunnies future living space. Our client supplied an Easter basket and small bowl for water and we shared lettuce and apples from our lunch (they liked the apple more than the lettuce). We were trying to be optimistic that the momma rabbit would return to reunite but seeing as how that didn’t happen, our client brought the bunnies inside to keep them safe and warm through the night. She began making phone calls to find a new, safe home for the bunnies, and kept a watchful eye out for the momma should she return.

Oh! and by the way, the pave stone patio we installed looked fantastic. The stone we installed was Belgard’s ‘Mega Arbel Stone’ in their beautiful Bella color blend. With the clients approval, we stayed until 9:00pm that Friday to finish the pave stone project because San Diego was scheduled to get hit with a pretty good rain storm the next day. It was important to have the joints sanded and to let the concrete hardened before the rain hit. We are grateful for the dedicated, hard work of our construction team and praise them for their efforts in taking care of our bunny friends!

Rancho Bernardo Pavers

We recently had the privileged of performing a backyard remodel with pavers, a custom built-in barbeque and gas gas firepit for the Bohensky’s in Rancho Bernardo. They were wonderful clients and we are delighted that we were able to assist them in the design and construction of their new entertainment fortress.

Like all projects we walk into, they had the basic mid-century style landscape. Juniper shrubs, dilapidated walls with barely distinguishable stucco, a cracked concrete pool deck (that had been patched in several places over the years) and a poor irrigation system. When they had called us for a free design consultation they were pretty much aware of what they wanted. Their “wish-list” included a buit-in barbeque, gas firepit and new concrete pavers around their pool deck.

After drafting a few different Sketchup model designs and a couple of sit-down meetings, we reached a final design and started the material selection process. Our initial material pallet included Belgard Lafitt Patio Slab pavers, stucco walls for the bbq and firepit and a flagstone counter top on the barbeque. During the construction process we changed the pavers from Belgard to RCP’s Stone Top paving stone with a 50/50 color blend of Sky Ranch and Brown Stone. The primary driver for the paver switch was the Bohensky’s liked the lighter color blend in the sky ranch and brown stone. We also changed the walls of the barbeque, firepit and sitting wall to be covered with an El Dorado stone veneer and capped with an El Dorado stone wall cap. The counter top changed to a poured-in-place colored concrete with a bullnose edge detail. We also added some landscape lighting to the wall, columns and bbq.

We finished up the project in about 4 weeks and it looks fantastic! Thanks to the Bohensky’s for their support and we look forward to attending the first Spring/Summer barbeque!
